The keys to the Kingdom have been handed over, renovations are almost complete, and we're as fired up as our panini press is going to be! Nate and Graham have moved on from Stemma and we're stoked to introduce the new duo. Kim and Mike are ready to continue making Bellingham tummies happy through the melty goodness of GRILLED CHEESE!
How it all began…
Let’s face it. It’s happened to all of us. It’s nothing to be ashamed of. It’s a rite of passage to everyone becoming a master chef at grilled cheese making.
We are Kim and Mike. We are foodies. By that we mean, we love EATING food! One of our all-time favorite comfort foods is a good grilled cheese. It’s timeless and dynamic! Grilled cheese is typically something you make on your own at home. We have made plenty! Making the perfect grilled cheese though can be a timely process. Kim seemed to think she could speed it up by placing a grilled cheese sandwich in a pan and turning it on high and walking away. Kim likes to multitask. She would return once she smelled the smoke, flip the grilled cheese over, and turn it down to medium until it got to a beautiful golden brown. She would then serve that sandwich, lovingly and proudly to Mike…BURNT SIDE DOWN.
When we bought our food truck, we knew it was going to be a grilled cheese experience! However, we did not have the perfect name for it. It wasn’t until we were on vacation with a few friends when Kim was making grilled cheese sandwiches for everyone and was easily distracted. Of course, she burned them! However, when she served them, burnt side down, her friend exclaimed “I think you found the name of your food truck!”
I know you’re tempted to look… I promise you, it’s not burnt :)
